CHICKEN AND BACON SOUVLAKI
Ingredients for 6 souvlakia:
- 1 chicken breast
- 4 peppers
- 2 tomatoes
- 6 rashers of bacon cut into four
- 1/2 cup of olive oil
- 1 clove of garlic pressed
- A pinch of ground black pepper
- 2 pinches of sweet red pepper
- 2 pinches of mixed herbs for chicken
- Salt to taste
- 6 sticks for souvlaki
Cut the chicken breast lengthwise into 4 pieces and then cut these into pieces for our souvlaki. Each souvlaki will need 4 pieces of chicken Marinate the chicken pieces with the spices, salt, garlic and olive oil for half an hour. In the meantime, cut the peppers and tomatoes into pieces, taking care to make them as square as possible as they will be put on the souvlaki stick between the pieces of chicken.
Half an hour after you marinated the chicken, you should immediately begin to put them on the souvlaki stick. Place a piece of pepper, then a piece of tomato, then bacon and finally chicken, and then repeat, putting 3 chicken pieces on the souvlaki stick and finishing off with the pepper. Place them on the baking pan and pour any olive oil left from the marinade over the souvlaki. Heat the grill and cook for 15 minutes on each side.
- 1/2 kilo fillet chicken leg
- 4-6 fresh pitta breads for souvlaki
- olive oil
- 2 tbsp. mustard
- 1 medium onion, cut into thin slices
- 1 sliced tomato
- 1 pepper cut into small cubes
- Tzatziki or sauce
For the sauce:
- 1 tbs. mayonnaise
- 1 tbs. strained Greek yoghurt
- 1 tsp. mustard
- 1/2 tsp. curry powder
Cut the chicken into mouthfuls Mix them with the mustard, salt, pepper and paprika.
Cook in a non-stick frying pan on a medium heat for 10 minutes. Cover with the lemon juice and add the oregano. Grill the pitta breads one at a time in a clean, non-stick pan with a very little olive oil, until they brown slightly. Turn to cook on both sides Grate the onion with a little salt and, if you want, mix in the pepper. Serve the pittas wrapped round the chicken with whatever combination of vegetables you choose and with sauce or tzatziki.
- 1 kilo of beef mince
- 2 eggs
- 3 slices of yesterday’s bread, soaked and then drained
- 2 medium tomatoes, grated
- 1 and a half large grated onions
- 1 teacup of. soda (soft drink)
- 1/2 teaspoon Oregano
- 1/2 teacup of finely chopped mint
- 1/4 teacup of olive oil
- Salt and pepper
Sauté the onion in 2 tablespoons olive oil. Mix all the ingredients together in a deep dish.
Place the mixture in the fridge to thicken. Put some olive oil on your hands and make burgers, all of the same thickness. Grill on a bbq or on the cooker for 9-10 minutes each side.
